Chucrut "col agria"
¿Estás satisfecho con tu salud o te importaría mejorarla? Hoy mi amigo y amiga vengo con un alimento
buenísimo y riquísimo. Con él puedes preparar muchas recetas para tú comida y a
la vez puedes mejorar tú salud y de esa forma vivir una vida más plena. Este
alimento es el chucrut.
El chucrut es un alimento fermentado que se originó en el centro de Europa y es básicamente la fermentación que se
realiza de las hojas frescas de col (repollo) con la sal marina. El resultado
es la salmuera que se forma con los jugos de las mismas hojas de col.
¿Qué vitaminas contiene el chucrut?
El chucrut es rico en vitamina C. Es por eso que es un
alimento necesario en estos días de
pandemia cuando deseamos tener un buen
sistema inmunológico y lo esencial para a eso es la vitamina C.
Ahora ¿Qué
relación tiene el chukrut con la vitamina C? La respuesta es que el repollo o
col contiene una determinada cantidad de vitamina C, pero al fermentar sus
hojas se fabrica más vitamina C, al
punto de quedar muy enriquecida. Ya
que las bacterias de la fermentación
fabrican más.
Tampoco esto no termina aquí, existen otras vitaminas
en el chucrut. Son la vitamina A, K , B1
y B2 . Además es rico en minerales y enzimas.
¿En qué casos funciona el chucrut ?
El chucrut tiene múltiples beneficios para la salud
entre ellos tenemos:
- Mejora problemas
de intestino permeable ayudando a la microbiota intestinal
-Ayuda a eliminar y controlar la cándida
-Mejora la deficiencia de vitamina C necesaria para la
absorción del hierro
-Contiene ácido láctico y sus bacterias ayudan en el
proceso digestivo para la absorción de nutrientes.
- Es rico en minerales y ayuda cuando se presentan
deficiencias de minerales como el
hierro, fósforo, magnesio y calcio.
-Tiene un efecto depurativo ya que ayuda a eliminar la
retencion de líquidos, además ayuda con
el ácido úrico alto, mejorando problemas como la gota.
-Ayuda en el buen funcionamiento del pancreas y el
hígado.
-Por último, el más importante en nuestros días,
derivado de todo lo anterior es,
que ayuda a fortalecer nuestro
sistema inmunológico. En pocas palabras limpia y regenera nuestro organismo.

La preparación del chucrut
Ingredientes.
Una col o repollo
Sal marina - 15ml por kilo de col
Agua
Frasco de vidrio limpio
Procedimiento
Picas finamente la col pero reserva un par de hojas que necesitas para el final.
Luego colocas la col picada en un bol, la pesas para
verificar la cantidad de sal que necesitas y echas la sal. ( recuerda son 15ml de sal por kilo de col).
Revuelves con las manos la col y la sal entre 10 y 12 minutos para que salga el jugo.
Luego rellenamos el frasco con la col, haciendo mucha
presión.
Si no ha soltado mucho jugo cuando rellenes el frasco,
puedes añadir un poco de agua hasta que este a dos dedos de la boca del frasco. Aquí en este paso
no olvides hacer presión en el contenido
del frasco.
Ya practicamente lleno el frasco envolvemos con las
hojas de col que hemos reservado antes.
Luego tapamos. Puedes tapar el frasco con una tela de
algodón.
Dejamos el frasco en un lugar sin mucha luz a temperatura ambiente por dos o tres semanas.
Cuando pasen las dos o tres semanas, podemos tenerlo
en nuestro refrigerador hasta seis meses listo para consumir en ensaladas o
como acompañate de una carne. Delicioso y saludable. Mas adelante en otros post
espero hacer algunas recetas con chucrut para acompañar carne, sopas y ensaladas.

Sauerkraut preparation
Ingredients:
A cabbage
Sea salt - 15ml per kilo of cabbage
Water
Clean glass jar
Instructions:
Cut the cabbage finely but reserve a couple of leaves
that you need for the end.
Then, put the chopped cabbage in a bowl, the weights
to check the amount of salt you need and add the salt (remember it is 15ml of
salt per kilo of cabbage).
Stir the cabbage and salt with your hands for 10 to 12
minutes so that the juice comes out.
Thereafter, fill the jar with cabbage, making a lot of
pressure.
If it has not released much juice when you fill the
bottle, you can add a little water until it is two fingers from the mouth of
the bottle. In this step do not forget to press on the contents of the bottle.
When the bottle is almost full, wrap with the cabbage
leaves that we have previously reserved.
Then cover. You can cover the bottle with a cotton
cloth.
We leave the bottle in a place without much light at
room temperature for two or three weeks.
When the two or three weeks pass, we can have it in
our refrigerator for up to six months, ready to consume in salads or as an
accompaniment to meat. Delicious and healthy.
